  • 1 teaspoon of grated ginger
  • Salt, to taste
  • Black pepper, to taste
  • 3 tablespoons of neutral-tasting vegetable oil. You can use soybean oil, rice bran oil, or sunflower oil
  • 2-3 tablespoons of Korean Chili Pepper Flakes or Gochugaru. You will find options like Taeyangcho Sunchang Gochujang and CJ Haechandle Gochujang in your nearest Asian market.
  • 1 tablespoon of brown sugar. White sugar will work as well.
  • 1 tablespoon of light soy sauce
  • 1 tablespoon of dark soy sauce
  • 2 tablespoons of oyster sauce

Preparing the Chili Garlic Sauce

Step 1

Peel and finely chop the onion or the shallots, garlic, and ginger. You can thinly slice the onion or you can chop it in small cubes. Make sure that the onion slices are thin enough to get cooked easily. You can crush the garlic cloves with the flat side of your knife which will make it easier to peel and chop. Use more chili flakes if you want to turn up the heat or use fewer if you cannot handle the heat. Spice should always be according to your preference.

Put a pan or wok on the stove on medium heat and put vegetable oil in it. Heat the vegetable oil well. You can check if the oil is ready by putting a slice of onion into the oil. The oil is ready if the onion starts sizzling instantly. Put the onion or shallot, garlic, and ginger in the oil and fry them lightly. We do not need for them to completely change color but they will release their aromatics.

Prepare the noodles according to the directions on the packet. Cut the Bok Choys in half and boil them for 1-2 minutes. Use a strainer to drain out the water and get the noodles in a bowl. Run it through cold water to stop the cooking process. This is important as cooking too much makes the noodles soggy.

Combining the Dish
